The Breads of India: Naan, Roti and Paratha

No Indian meal is complete without bread. It is the plate, the spoon and half the pleasure - the thing you tear, fold and scoop with. And there are far more kinds than the naan most people know.

Naan

The famous one: a leavened bread slapped onto the hot wall of the tandoor and peeled off blistered and soft. It comes plain, with garlic, with butter, or stuffed with everything from cheese to spiced lamb.

Roti and chapati

Lighter and unleavened, roti is the everyday bread of Indian homes - a simple wholemeal flatbread cooked on a griddle. It is the workhorse of the table, made fresh for almost every meal.

Paratha and more

Paratha is layered and flaky, often stuffed with potato or peas. Then there are regional breads beyond counting - bhatura, kulcha, puri. Each suits a different dish and a different mood.
